Vegetable Broth


After searching high and low and finding NO Vegetable Broth in any of the stores in our area, LIGHTBULB, it's time to make my own. 

So basically, it's easier than I thought!  You can place all kinds of scraps of vegetables - ends, cut up portions, (uncooked) leftovers, whatever in a pot with a lid,  8 cups of water, bring to a boil, simmer for an hour, and strain out the vegetables to leave - voila! - Vegetable Broth! 

OR

You can follow a recipe - which, I do both - but here's one such recipe:

1 onion
1 carrot
2 stalks of celery - chopped
1 potato - chopped in large chunks
3 garlic cloves
3 bay leaves
1 tbsp soy sauce
8 cups of water
salt & pepper

Put in pot with lid, bring to a boil, simmer for one hour, strain the vegetables out, and you have vegetable broth. 

This can be used in recipes, gravies, base for soups, etc.
